Just for Fun Classes...
The New Year Brings New Ideas and New Classes.

 Basic Cooking Skills will introduce you to, as the name suggests, basic techniques for wide varieties of foods from different cultures throughout the year. We'll help you think outside the box, not just teach you a few recipes. And since food is to share
with those whom we care about, we've structured things so that you may attend class
for the day, then invite a spouse, companion or friend to join us all for dinner and wine at the
end.


And now for something entirely different, Release Your Inner Baker! These classes are designed to get at the frustrations we've all encountered when attempting to re-create a recipe from a magazine or yet another new cookbook - you know, when you'd swear you've followed the instructions to the letter, but the results leave you feeling a little flat. We will help you understand the whys and wherefores of basic baking techniques so that you have the power to read any recipe anywhere and execute it much more happily!


BASIC COOKING SKILLS: BRAISING
Saturday, January 14, 2 p.m. - 6 p.m.
$50.00, includes dinner for 2 served at 6p.m. Braising is an old cooking technique that produces heavenly moist, tender, "fall off the bone" kinds of dinners just perfect for these long winter nights: Rustic French Braised Duck and Osso Buco, along with some easy side dish accompaniments.
 
BASIC COOKING SKILLS: PASTA

The traditional long pastas, such as spaghetti and angel hair and sauces to dress them in, as well as ravioli and perhaps the best lasagne you have ever had!

Always among our most popular classes. Great soups start with great stocks, and great soups are what winter is all about!

If you find springform pans a bit maddening, if you're tired of cheesecakes that crack, if you'd love to be able to toss off a perfect creme brulee as if it were just a little nothing, come spend the day with us!
 
Crepes - Savory and Sweet
Monday, January 23, 6 - 8:30 p.m. $35.00
I know, I know: crepes technically aren't baking, but they are typically thought of as a dessert, so work with me, please. We will make some savory fillings as well. Yes - it's all in the wrist, and no - you don't have to go buy a special pan!

Before I went to culinary school and really learned to make cakes and decorate them, the very thought nearly made me want to pour a stiff drink. Honestly, I would start worrying about the cake days in advance of anyone's birthday. Let me spare you a serious time commitment, not to mention a few thousand dollars and a potential drinking habit, and share the techniques that will have you begging to bake cakes for anyone you can collar. *Special added attraction: conquer your fear of pastry bags! Because, of course, any cake needs to be iced and decorated.
 
Pies and Tarts
Monday, February 6, 6 - 8:30 p.m. $35.00
Have you ever held your breath as you start to cut into a newly minted pie, in front of a group of course, terrified the crust will be so tough you'll have to call for the chainsaw? Rather be naked instead? Well keep your drawers on, because it is possible to avoid both possiblities with just a few good pastry-making techniques. We'll make some fruit fillings, some cream, and since Valentine's day is coming, some chocolate, too!

Because as we know, Valentine's Day is coming. Take home a box of chocolate delights: dark chocolate, milk chocolate, white chocolate, all hand-rolled by you for someone you love.
 

The Fine Print

All classes are held at the Almanor Culinary Arts Academy, 1431 Highway 36 (the last building on the left as you head west out of town). They are all hands-on, so class size is limited. Classes fill rapidly, so please register early. Please feel free to email or call to place your name on class lists; pre-payment guarantees your spot. Aprons are furnished for each class, and all recipes are yours to keep.
